I use my Chemex as a serving vessel for my Moccamaster when guests come. And sometimes I come into possession of a darker roasted coffee and the thick filters tamp down the bitterness (and there's not much of a "profile"). But for the good stuff (like MFC beans), I use a V60 for pour overs.
Haha, that's a great use for the Chemex! And yeah, the Kalita design baffles me. It takes one use to see that it needs bigger drain holes. Loads of people use power drills to mod it. Still, I'll take Kalita over Chemex any day!
I use my chemex everyday and I love her but I often sit by the window as a gentle rain runs down to ponder if there is more pour over brewers out there. Then my Chemex slaps the sh!t out of me and I come to my senses and but to my one true love the chemex.

I have repurposed my Chemex for mixing and storing my brew water. It’s just so…nice looking.
Even with ridges, the kalita wave (+kalita filters) seems to clog almost as often as the chemex for me.

That’s what I did with my wave! I eventually ended up with something ceramic that I can easily preheat. The wave has a classic look to it though!
